Cappuccino Cheesecake
8 whole graham crackers, crushed 5 tablespoons melted unsalted butter 1 1/2 cups sugar 1/2 cup whipping cream 4 teaspoons instant espresso powder or instant coffee powder 1 1/2 teaspoons vanilla extract 4 (8 ounce) packages cream cheese, room temperature 4 large eggs 2 tablespoons all purpose flour 1 cup semi-sweet chocolate chips chocolate, shaved into curls (optional)
Preheat oven to 350. Mix crackers, butter and 1/4 cup sugar in medium bowl; press onto bottom (not sides) of a 9-inch spring form pan with 2 3/4-inch high sides. Bake crust 10 minutes. Cool. Maintain oven temperature. Combine cream, espresso powder or coffee and vanilla in small bowl; set aside. Using electric mixer, beat cream cheese in large bowl Until smooth. Gradually beat in remaining 1 1/4 cups sugar, then eggs 1 at a time. Beat in flour. Stir espresso mixture until power dissolves, beat into cream cheese mixture. Stir in chocolate chips. Pour batter over crust. Bake cake until edges are puffed and beginning to crack and center is just set, about 1 hour 5 minutes. Cool on rack for 30 minutes; chill, uncovered for 6 hours. Cut around cake to loosen. Release pan sides. Top with chocolate curls, if desired.

Pasta e Fagioli
1 pound ground beef 1 small onion, diced (1 cup) 1 large carrot, julienned (1 cup) 3 stalks celery, chopped (1 cup) 2 cloves garlic, minced 2 14.5-ounce cans diced tomatoes 1 15-ounce can red kidney beans (with liquid) 1 15-ounce can great northern beans (with liquid) 1 15-ounce can tomato sauce 1 12-ounce can V-8 juice 1 tablespoon white vinegar 1 1/2 teaspoons salt 1 teaspoon oregano 1 teaspoon basil 1/2 teaspoon pepper 1/2 teaspoon thyme 1/2 pound (1/2 pkg.) ditali pasta
1. Brown the ground beef in a large saucepan or pot over medium heat. Drain off most of the fat. 2. Add onion, carrot, celery and garlic and sauté for 10 minutes. 3. Add remaining ingredients, except pasta, and simmer for 1 hour. 4. About 50 minutes into simmer time, cook the pasta in 1 1/2 to 2 quarts of boiling water over high heat. Cook for 10 minutes or just until pasta is al dente, or slightly tough. Drain. 5. Add the pasta to the large pot of soup. Simmer for 5-10 minutes and serve.

White Chicken Chili 1T oil 1 onion chopped 3 garlic cloves; minced 1- 4oz can diced jalapenos 1- 4oz can chopped green chilis 2 tsp cumin 1 tsp oregano 1 tsp cayenne pepper 2- 14.5 oz cans chicken broth 2 chicken breast 3- 15oz cans white beans; drained and rinsed shredded cheese (your preference) * saute onion in oil until tender. * add garlic, jalapeno, green chilis, cumin, oregano, and cayenne pepper. Cook until mixture is tender (about 1 min). * add chicken broth and chicken to mixture and cook until chicken is done. * remove chicken from mixture and dice. * add chicken and white beans to mixture. * simmer about 15 mins. * when serving, top with shredded cheese. @@ this recipe is VERY spicey @@ I skip the jalapenos and back off a bit with the cumin and cayenne pepper.

Beef Cheese Ball From the kitchen of: osumom
Preparation time: 15 Min.
INGREDIENTS
8 oz package of Philadelphia Cream Cheese 4.5 oz package of dried beef 2 T. Miracle Whip 1 t. chopped onion ½ t. mustard
Mix Miracle Whip, onion and mustard. Blend in cheese with a fork.
Coarsely grind dried beef in a processor and add 2/3 to the cheese mixture.
Form ball. Spread a little dried beef on plate (to keep ball from sticking) and place ball on it. Cover ball with the rest of the dried beef. Chill.
Serve with Ritz or Townhouse crackers (or whatever you prefer) and enjoy.

Deep-Fried Oreos
Deep-Fried Twinkies, fried chocolate bars and now fried cookies have been selling like hot cakes at fairs around the nation recently.
The chefs behind these sugary fried treats say success depends on the batter, which insulates the fried object from direct contact with the oil. If the batter is done right, it will become an edible shell and protect its the melted innards.
Shirley London shared the recipe for her deep-fried Oreo cookie treat with Good Morning America.
Ingredients
1 cup buttermilk pancake mix 3/4 cup ice water 1 quart vegetable oil 1 sleeve of Oreo cookies (14 each) 2 tablespoons confectioners sugar Directions
1. Freeze cookies for 3 hours.
2. In a heavy-gauge 3-quart saucepot heat oil to 350 degrees F.
3. While oil is heating, set up a sheetpan with paper towels for draining.
4. In a medium-sized mixing bowl stir water into buttermilk pancake mix with a wooden spoon until thoroughly combined. As soon as batter is smooth, dip each cookie, one at a time, into batter and smooth batter, making a thin coat completely around the cookie. Place coated cookie carefully into hot oil. Repeat for each cookie. Fry on both sides, turning over once until golden brown.
5. Remove fried cookie from hot oil with metal tongs and drain on paper towels. Dust with confectioners sugar.
6. Let cool slightly (about 2 minutes) before serving.

OK.. I've heard the remarks, NO I AM NOT A GOURMET COOK, just the queen of fast cook meals and a pantry rat. So, here is one of my fast easy recipes I don't use proper measurements, I cook by sight and taste so you will have to adjust accordingly. Sorry
Chipotle Shrimp, Cheese quesadillas
6 shrimp - steamed,shelled - I keep frozen on hand, you can use precooked frozen too 1/4 c - cream cheese - any kind , used for creaminess Chipotle seasoning - I use Ortega Taco seasoning Shredded Cheese - I keep a large bag of Mixed Shredded cheese on hand always Flour Tortillas - any size, I use large ones
chop shrimp in to small pieces
Add cream cheese to a bowl, sprinkle chipotle seasoning about 2 TBLS and blend until creamy add chopped shrimp and blend
Heat a large skillet or griddle, I use about a half T of butter ( use what you want, but butter will brown the tortilla and make it crisp)
lay tortilla on griddle and put the shrimp mixture on one half, not quite to the edge, then sprinkle on shredded cheese. fold in half
heat until crisp and golden brown, flip and repeat
Place on large plate, and cut into four sections with pizza cutter
from start to finish, should be 20 Min's or less.....
there ya go
Top with sour cream, guac, or serve as is along with a salad or black bean salsa

Different Cheeses Parm, Cheddar white and yellow, always a bag of shredded cheese
Butter Half Half
small bottles of white and red wine = great for last minutes sauces
canned : clams, salmon and tuna black beans green beans chickpeas white beans tomatoes sauce, paste, diced
Chicken Broth Beef Broth I use Pacific Organic for both
Freezer: Shrimp - cooked and uncooked corn peas Frozen Mixed - broc, cauliflower, carrots, pea pods, chicken breasts - free range organic ground beef - 1 lb packages - organic green and red bell peppers - cut into strips
Pasta: Every kind - never can have too many types
Spices: Fresh Garlic Fresh Ground Pepper red pepper flakes cumin coriander plus normal spices
Fresh herbs: I grow these during the summer: Basil Thyme - lemon, reg, rosemary Cilantro dill chives
Oils OLIVE is a must, I keep several different kinds Canola Sesame
Balsamic Vinegar soy sauce anchovie paste
I also keep several types of rices: brown wild white short and long grains Indian lentils although they are not rice, I use them the same
I am sure I am forgetting lot but with these and a few fresh ingredients you can throw together a meal in no time.

Beef & Tortellni Soup 1lb gr.beef 1 28oz can crushed tomatos 1 10 1/2 oz can of french onion condensed soup 1 9oz package of fresh cheese tortellini 1 t dried basil 1 1/2 T parmesan or romano cheese 2 cloves of garlic or 1/4 t garlic powder black pepper to taste (optional) some caulifloer,broccoli or green beans,zucchini, whatever veggies u like In a 5quart pan over high heat cook gr.beef, drain the grease add the crushed tomatos,fr.onion soup,basil,cheese,garlic,black pepper and 3 1/2 Cups of water,veggies and tortellini over high heat until it starts boiling then reduce heat to simmer,cover and cook about 10-15min stirring occasionally. (once u make this reciepe u will find u can change it up any way u want, I add more water, U can add beef boulion, whatever change it up and make your own) ENJOY!!

I have made this twice. It is a good recipe to add whatever u got and u can use different substitutions. I also have used cheese and meat tortellini both r good. yumm Thanx Irish and my family thanx ya too.
